A Classic and Simple Squash Casserole Recipe


1 large onion, chopped

8 tablespoons (1 stick) butter

6 medium to large sized squash, sliced, cooked, and drained, with all water squeezed out

1 cup season panko bread crumbs

½ cup sour cream

½ cup of milk

½ cup heavy whipping cream

1 teaspoon salt

1 teaspoon pepper

2 cups grated Cheddar cheese.


Preheat oven to 350 degrees. Sauté onions and squash in butter for 5 minutes. Remove from pan, drain, and allow to cool. Beat eggs, milk, and heavy cream together. Gently fold cooled squash, sour cream, salt and pepper into eggs and milk. Pour into buttered casserole dish and top with seasoned panko bread crumbs. Bake for 25 to 30 minutes. Allow to set for at least 20 minutes before serving.
