
Chicken Taquitos Ingredients
Tortillas: I use white corn tortillas and heat them in my skillet before adding my fillings so that they don’t tear.
Chicken– any cooked chicken will work. I generally pick up rotisserie chicken in the deli or I used canned chicken in a pinch.
Cheddar cheese, or your favorite kind.
Verde Salsa
Cholula Hot Sauce
Chopped Green Onions
Chicken Taquitos Directions
In a large bowl, combine chicken, green onions, cheese, Verde salsa and hot sauce.
Working one at a time, transfer tortilla from skillet to a work surface; place a small amount of the chicken mixture in the center of each wrapper.
Bring the bottom edge of the tortilla tightly over the filling, rolling from bottom to top until the top of the tortilla is reached.
Lay opening side face down until ready to fry. Repeat with remaining tortilla and filling.
Heat 1/4 inch of peanut oil in a frying pan
Working in batches, add taquitos to the frying pan, turning occasionally until evenly golden and crispy, about 2-3 minutes.
Transfer to a paper towel-lined plate.
Serve with sour cream, salsa, and cilantro when cool enough to eat.
